Issues Index | Next => Although cheese has been made in various styles for thousands of years, it was on this day in 1815 that the first factory for the commercial production of cheese opened. This was in the Canton of Bern and the product was Emmentaler, or what Americans tend to just refer to as Swiss. Here are a few quotes to celebrate this milestone, and at least 400 other varieties of cheese.
Cheese that is required by law to append the word food to its title does not go well with red wine or fruit. A cheese may disappoint. It may be dull, it may be naive, it may be oversophisticated. Yet it remains cheese, milk's leap toward immortality. Wine and cheese are ageless companions, like aspirin and aches, or June and moon, or good people and noble ventures. A corpse is meat gone bad. Well and what's cheese? Corpse of milk. Pessimism is as American as apple pie; frozen apple pie with a slice of processed cheese. A dessert without cheese is like a beautiful woman who has lost an eye.
